Who am I?

I’m Eric Heurtel, executive chef. I’ve worked in luxury hotels and Michelin-starred restaurants in France and abroad (Egypt, Emirates, Morocco, China), alongside great chefs such as Jacky Fréon (1st Bocuse d’Or), Jacques de Ribaucourt, Yves Thuriès, Frédérique Blanc, Joël Normand MOF and many other celebrated chefs.

Master and Michelin-starred chef, member of the Compagnons du Tour de France, Euro-Toques member, Norman Toques member, vice-president of Synhorcat Normandie and president of Le Havre restaurant association.

I’ve worked for President Obama, Gorbachev, was private chef to President François Mitterrand, for sheikhs in the Emirates of Dubai & Abu Dhabi, as well as many personalities in cinema and song, and recently as private chef for Paul Martin, Prime Minister of Canada.

My approach

I use fresh, organic and seasonal products as well as the modernity of my dishes to mark my culinary imprint. Through my creations, I was the first to encounter new techniques such as vacuum cooking at low temperatures and nitrogen cooking.
